From our feature, The Vivant’s Top Ten Fabulous Gin Cocktail Recipes, I went all the way to Fiji (at least virtually) to find this wonderful recipe.
There are two things I like about this cocktail. First, it incorporates cucumbers, which gives it a very light, refreshing tone; second, it’s from Fiji! I just can’t resist. My wife and I are still staying inside and we’ve forgone our vacation trips this year due to the pandemic, but as soon as it’s safe to travel we’re getting on that plane – and Fiji is one that has long been on our list. The Jean-Michel Cousteau Resort, a five-star eco-resort named in honour of the French environmentalist and oceanographer, would be just what we need after this is all over. They tell me their Cucumber Chill is “like a classic Pimm’s without the frills.” At the resort, they use local Fiji limes, but I will have to make do with my local Kroger. Here’s the recipe:
Ingredients:
- 1-1/2 oz Hendrix gin
- 2 oz cucumber juice
- ½ oz lime juice
- ½ oz sugarcane juice
Directions:
Combine gin with lime, cucumber, and sugarcane juices. Shake and strain.
