From our feature, The Vivant’s Top Ten Fabulous Gin Cocktail Recipes, Boardroom Spirits shares a recipe for gin with fresh thyme.

The aptly-named Thyme for Gin, from Pennsylvania’s Boardroom Spirits, is another one that captures the simple flavour of fresh thyme from the garden (good thing I have a lot of it growing in the garden!). Boardroom distils two types of gin – Classic, and American Dry. They tell me though, if you don’t have the thyme, you can easily substitute another fresh herb, like mint, rosemary or basil. I also have some Thai basil growing out back, so I think I’m going to give it a try with that! And here is their fabulous recipe for Thyme for Gin:

Ingredients:

Directions:

  1. To make the thyme simple syrup: Bring equal parts sugar and water to boil with three tablespoons of fresh thyme leaves (stems removed). Simmer for ten minutes, cool, and strain.
  2. To make the cocktail: In a shaker filled with ice, add all of the ingredients. Shake vigorously until well chilled and strain into a chilled cocktail glass. Garnish with a fresh thyme sprig.
