From our feature, The Vivant’s Top Ten Fabulous Gin Cocktail Recipes, I checked in with Jessica Randhawa from The Forked Spoon, and she shared one of her best gin cocktail recipes with me.

I can’t resist checking in at The Forked Spoon whenever I’m looking for a new recipe. I asked Jessica Randhawa, head chef, recipe creator and writer behind that incredible site if she had any good gin cocktail recipes, and sure enough, she had a great one that she says is simple to make and doesn’t require a lot of preparation. She does tell me though, that a strainer is probably a good idea so you don’t end up with little bits of thyme leaves between your teeth! Jessica graduated from my own alma mater (University of California, Santa Cruz – go slugs!), and also like me, she spent quite a lot of time travelling throughout Asia, including my second home of Thailand. Jessica met a lot of great chefs there, although I have to admit my favorite Thai chef is my wife, who just spent all day in the kitchen preparing a delicious miang kham.

Jessica’s Limoncello Gin Cocktail Recipe is wonderfully refreshing and uses fresh thyme, which I happen to have growing in the back yard, so this is definitely on my agenda for cocktail hour today.

Add some thyme to a cocktail shaker and muddle gently. Add the gin, limoncello, and fresh lime juice. Fill with ice and stir thoroughly until cold. Strain through a mesh strainer into a glass filled with ice. Top with bubble water if desired. Garnish with fresh thyme and lime or lemon wheels or wedges.
